♡ Ingredients:
- Pancake Mixture
- 2 cups of all purpose flour
- 1/2 teasoopn of salt
- 1 egg
- Coconut Filling
- 2 cups of finely scraped coconuts
- 1/2 teaspoon of salt
- 1 cup of sugar
- 1 tbsp of water
- 2 cardamom seeds or "Karadamungu" in Sinhala (OPTIONAL)
- 1/4 teaspoon of vanilla extract
♡ How-to:
- Mix in all the dry ingredients in a bowl.
- Add in the coconut milk and the egg.
- Use a whisk to beat the mixture to avoid any lumps.
- Coconut filling
- Heat the sugar in a pan under low heat.
- Add around 1 tablespoon of water to thin the syrup when it starts bubbling.
- Add in the vanilla and cardamom seeds.
- Add the coconut
- Mix well until the coconut and syrup are well combined.
- Pancake
- Use a 1/2 cup sized spoon to place the pancake mixture into a greased nonstick pan.
- Swirl the the pan to make the pancake form into a desired size.
- Once it looks decently cooked, flip the pancake to the other side.
- Take out and let it cool.
- Place a tablespoon of the coconut filling in the centre edge of the pancake.
- Roll the pancake tightly over the filling and serve to a plate.
