Sri Lankan Sweet Coconut Pancake Recipe


   Ingredients:

  • Pancake Mixture
    • 2 cups of all purpose flour
    • 1 1/2 cups of coconut milk ( or plain water)
    • 1/2 teasoopn of salt
    • 1 egg

  • Coconut Filling
    • 2 cups of finely scraped coconuts
    • 1/2 teaspoon of salt
    • 1 cup of sugar
    • 1 tbsp of water
    • 2 cardamom seeds or "Karadamungu" in Sinhala (OPTIONAL)
    • 1/4 teaspoon of vanilla extract

 How-to:

    • Mix in all the dry ingredients in a bowl.
    • Add in the coconut milk and the egg.
    • Use a whisk to beat the mixture to avoid any lumps. 


  • Coconut filling
    • Heat the sugar in a pan under low heat. 
    • Add around 1 tablespoon of water to thin the syrup when it starts bubbling.
    • Add in the vanilla and cardamom seeds.
    • Add the coconut 
    • Mix well until the coconut and syrup are well combined. 

  • Pancake 
    • Use a 1/2 cup sized spoon to place the pancake mixture into a greased nonstick pan. 
    • Swirl the the pan to make the pancake form into a desired size. 
    • Once it looks decently cooked, flip the pancake to the other side.
    • Take out and let it cool. 

    • Place a tablespoon of the coconut filling in the centre edge of the pancake. 
    • Roll the pancake tightly over the filling and serve to a plate.
