Coconut Cookies Recipe
- 2 cups of all-purpose flour
- 1/2 tablespoon of baking powder
- 1/2 cup of room temperature butter
- 1 1/4 cups of coconut flakes
- Preheat the oven to 175 °C (347F)
- Beat or whisk the butter, sugar, egg and the vanilla together until the sugar dissolves.
- Add all the dry ingredients to the mixture little by little.
- When everything is well combined, add in the coconut flakes and mix again.
- Place the cookie dough onto a baking-sheet or a well greased baking tray using a tablespoon (use a teaspoon if you prefer the cookie to be smaller in size). Make sure to keep atleast 3 inches of space between each scoop of dough.
- Pop the tray in the oven for around 10 minutes.
- Take the cookies out once the edges turn golden brown.
- Let them cool in open air for around 20 minutes before serving.
