Coconut Cookies Recipe


  • Ingredients:
    • 2 cups of all-purpose flour
    • 1/2 tablespoon of baking powder
    • 1/4 teaspoon of salt
    • 1/2 cup of room temperature butter
    • 1/4 cup of sugar
    • 1 egg
    • 1/2 teaspoon of vanilla
    • 1 1/4 cups of coconut flakes 

  • How-to:
    • Preheat the oven to 175 °C (347F)
    • Beat or whisk the butter, sugar, egg and the vanilla together until the sugar dissolves. 
    • Add all the dry ingredients to the mixture little by little.
    • When everything is well combined, add in the coconut flakes and mix again.
    • Place the cookie dough onto a baking-sheet or a well greased baking tray using a tablespoon (use a teaspoon if you prefer the cookie to be smaller in size). Make sure to keep atleast 3 inches of space between each scoop of dough. 
    • Pop the tray in the oven for around 10 minutes.
    • Take the cookies out once the edges turn golden brown.
    • Let them cool in open air for around 20 minutes before serving.
