Sri Lankan Crispy Chili Chicken
♡ Ingredients :
- 1 whole chicken cut into pieces
- 1 large red onion (sliced)
- 5 medium sized banana peppers (cut into rings)
- 1/2 teaspoon of ginger
- 4 cloves of garlic
- 3 tablespoons of red chili flakes
- 1 chicken stock cube
- 1/2 cup of corn flour
- 1/2 cup of all purpose flour
- 1/2 teaspoon of chili powder
- 1 teaspoon of salt
- 1 teaspoon of pepper
- Crush the garlic, ginger and green chilies using a mortar and pestle or a grinder.
- Marinate the chicken by mixing in the all purpose flour, corn flour, red chili powder, pepper salt and the egg. Mix well until all the pieces are well coated.
- Let the chicken marinate in the mixture for around 2 hours or refrigerate it for an hour.
- Fry up the chicken pieces in high heat oil.
- Fry all of them one until light brown and take out.
- Fry them for the second time until crispy and golden brown in color.
- Heat up some oil in a pan in medium high heat.
- Add in the paste we previously made using garlic, ginger and green chili.
- Add in the chicken stock cube and the curry leaves.
- Add in the onions.
- Once the onions turn slightly brown and translucent in color, add the chili flakes.
- Add in the banana peppers.
- Let the ingredients cook for a minute and finally add the crispy fried chicken.Serve the chicken to plate and enjoy.
