Sri Lankan Spicy Curry Chicken Pasta Recipe

♡ Ingredients

• 4 tablespoons of olive oil/ butter
• 1 cup of chopped onions
• 2 cloves of chopped garlic
• 1 cup of diced tomatoes
• 2 chicken stock cubes
• 1/2 cup of fresh milk or coconut milk
• 2 tablespoons of corn flour
• 2 cups of bite sized chicken pieces 
• 4 cups of boiled pasta of your choice
• 1 tablespoon of salt
• 1/2 tablespoon of pepper
• 2 tablespoons of red chili powder

♡ How To: 

• Marinate the chicken with chili powder, pepper and salt at least 1 hour ahead of time. 
• Heat up some oil in medium high heat.
• Add in the marinated chicken.
• Cook for 3- 4 minutes and remove the chicken to separate plate. 
• Add the onions to the pan and fry until translucent in color. 
• Add the chicken stock cube to the tempered onions.
• Add the tomatoes and half of the diced carrots and leave the rest of it behind.
• Add back the cooked chicken.
• Mix the corn flour with come cold water and add into the tempered vegetables. 
• Add the milk.
• Reduce the heat and bring to a simmer.
• After around 3 minutes add in the pasta and mix well.
• Add in the left over diced carrots for an extra crunch. 
• Serve hot and enjoy the dish with your family.
